Fish Tacos with Avocado Cream

Our love of tacos knows no bounds. There’s nothing like a filling, crunchy taco to turn a bad day into an amazing one. Breakfast tacos, spaghetti tacos, traditional tacos...and now, our newest obsession, fish tacos! Paired with avocado cream and, dare we suggest, a margarita (!) and you’ve got the perfect Taco Tuesday.


Ingredients: For the tacos: 1 lb. Haddock (any firm white fish will work) 1 tbsp. chipotle powder 1 tbsp. lime juice I tbsp. garlic powder 1 package corn tortillas 1/2 head red cabbage shredded 1/4 red onion finely sliced 1/4 cup olive oil 1/2 cup cilantro

Optional feta for sprinkling on top

For the avocado cream: 1 avocado

Juice of 1 lime

Salt Pepper 1/4 cup plain yogurt 1 green onion

Instructions:

1. Marinate the fish in chipotle powder, 1 tablespoon of the lime juice and garlic powder for at least 20 minutes. 2. While the fish marinates, prepare the slaw. Mix red cabbage with red onion, remaining lime juice, cilantro and olive oil. Set aside. 3. To prepare avocado cream, blend avocado with lime, yogurt, green onion, salt and pepper to taste. Set aside. 4. In a frypan, heat olive oil on medium and then fry marinated fish for around 2 minutes each side until golden brown and cooked through. 5. Assemble tacos by placing scoop of avocado cream on a tortilla, then a piece of fish. Top with a small handful of slaw and a sprinkle of feta if desired.
