Hello sunshine. Spring has finally arrived in our kitchen. We were craving some light and refreshing recipes so we’ve whipped up a green, easy dish that you can easily eat for brunch, lunch or dinner.
1/2 lb. asparagus
1/4 cup high heat oil
Salt and pepper
Preheat your oven to 500°F. Cover a baking sheet with tin foil and line up the asparagus. Sprinkle with oil (1-2 tbsp. needed). Season with salt and pepper then place the sheet in the oven. Roast the asparagus until they are tender and start browning, which normally takes about 15 minutes. Set aside.
Heat some oil over medium heat. Add the eggs to a frypan and fry for 2 minutes. Season with salt and pepper and add the chili flakes. Turn the heat to low, cover the pan and cook an additional minute until the egg whites are cooked through.
Divide the asparagus between two plates and top each with 1 egg. Season to taste and serve.
