By land or by sea? How about both! This Salmon and Apple Fennel salad is the perfect combination of protein and vitamins for a healthy and delicious boost! Super easy to make, add this to your last minute go-to dinner dishes!
For the Apple Fennel Salad:
1 apple, sliced on a mandolin
1 fennel bulb, finely sliced on a mandolin
Juice of one lemon
1 small handful of flat-leaf parsley, chopped
1 tbsp. of seeded mustard
3 tbsp. of olive oil
For the Salmon:
2 wild-caught center-cut salmon fillets
Olive oil, for frying
Toss the ingredients for the salad together in a bowl and season with salt and pepper. Set aside.
Season the salmon generously with salt and pepper.
Heat a few tablespoons of olive oil over high heat in a pan and add the salmon fillets skin side down, reduce heat to medium and cook for three minutes. Flip the salmon and cook for another two or so minutes, checking for doneness after a minute.
Serve salmon with apple fennel salad.
